Bamboo, water and a tropical breeze create a tranquil setting at this riverside restaurant featuring Mediterranean-European cuisine. Nine private cocoons offer a romantic experience.
In Bali, farmers store their annual rice harvest in kubu, or bamboo huts. That traditional design and connection to the land inspired the experience at Kubu. The restaurant focuses on Mediterranean-European cuisine prepared with Bali-sourced ingredients, including the signature six- to eight-course degustation menus. The space has a romantic air with the Ayung River flowing alongside and private dining cocoons for intimate meals and special occasions.
Dress code: please be presentably dressed at all times. Our dress code is smart casual; singlets and flip flops are not permitted in Kubu.
BAYU RETNO TIMUR, CHEF DE CUISINE
Born in East Java, Indonesia, Chef de Cuisine Bayu Retno Timur dreamed to be a chef since he was young. His career began in 2003 at the pastry & bakery section of Kudeta Bali, and was quickly promoted as Commis Chef due to his great performance, but most importantly his sincere love and passion for culinary arts. In 2006, Bayu moved to Bulgari Resort Bali as Demi Chef de Cuisine at Sangkar Restaurant (all-day dining restaurant). His admiration for fine dining had moved him to the resort’s multi award-winning Italian Restaurant “Il Ristorante” until he reached the position of Junior Sous Chef. After 6 years with the Bulgari, Bayu moved to The Mulia Resort, Bali as Senior Sous Chef before his assignment as Chef de Cuisine for Kubu Restaurant at Mandapa, a Ritz-Carlton Reserve, Bali. In September 2017, he was promoted to Executive Sous Chef.
With over than 14 years of experience in the culinary industry within 5-star establishments, Bayu has received multiple awards such as the Blackbox Indonesian Final 2008 and 2013 to name a few. He also represented Indonesia in the prestigious Bocuse d’Or Asia-Pacific 2018 in Guangzhou, China.
My boyfriend and I ate here to celebrate my birthday. Truly one of the most unforgettable, amazing meals I will ever have. The location and setup of the restaurant was amazing, right by the Ayung River in a little “nest”. They only have 9 of these nests, each one right by the river so there’s always an amazing view from each one. We both chose “The Essential” menu and were stuffed by the end. The food was amazing, we especially loved the Grilled Wagyu Ribeye and the Chocolate Cappuccino dessert. They even gave me a special birthday cake which was a nice touch. A bit pricey but definitely worth it considering the quality of the food and the location. You cannot get this anywhere else. Would highly, highly recommend!
